Hello this is Regina speaking! Last evening I attended the Naropa art show at our Nalanda campus. The art was phenomenal and so were the snacks! There was also live music to accompany the artistic observing. I encourage everyone to attend the next one. Our peers are truly amazing! :)

Asian Taste #3: Steamed Eggs
Hey Snow Lo people!
I bet you all are so ready for spring break.
Today I'm here with the steamed eggs recipe.

Steamed Eggs (2 servings)

Ingredients
1) 2 eggs
2) 1 package of shiitage mushroom
3) 1 green onion
4) salt
5) soy sauce
6) 1/2 cup of soy milk or milk
7) 1/2 cup of water or broth of preference
8) 1 package of frozen shrimps (additional for non-vegetarian)
How to
1) boil water in a big pot
2) wash shiitage mushroom, squeeze water out, and slice into thin pieces.
3) wash green onion and slice into pieces.
4) mix eggs (both white and yolk), salt, soy sauce, water, shiitage mushroom, green onion, and milk together in a bowl.
5) add it into 2 small bowls (use the ones that aren't deep so eggs are cooked faster)
6) use either 2 small plates or an aluminum foil as the lid.
7) low down the heat to low, sit both bowls in boiled water, and close the pot's lid.
It should take around 30-45 minutes to be cooked.
When it's cooked, it will be similar to custards.
Quick Shortcut: if you are in a hurry. Follow only steps 2 - 5. For step 6, use a plate only. Then, put the bowl in your microwave. Cook it around three minutes. However, its surface won't be smooth comparing to the original procedure
You can have it plain or with rice. Enjoy!!!

Sign up at the community meeting for a place on the tournament bracket. Then in March Madness style, we'll play untill one player remainst. Beware though, a twist in this tournament may leave you impaired!

Chinese people always have a soup on their dining table almost every meal.
That's because it is very filling and maintain body temperature (I personally don't care as long as is yummy
).
Qing Tang (清汤) is the Chinese name of a clear soup.
You can have it with either rice or noodle.
It can be cooked in many ways, depending on your preference.
The following is my recipe.

Qing Tang Ingredients
- a package of tofu
- 4 cups of water
- a cube of broth (veggies, chicken, pork, beef, etc. is fine)
- salt
- pepper/black pepper
- soy sauce
- 1 package of dried shiitake mushroom (fresh one is good too but way more expensive)
- noodle of your choice
- Green onion
- a half package of beansprout
- chili powder
- 1 - 2 limes
- olive oil/vegetable oil
- a cup of minced garlic
- boil water in a pot.
- while waiting for water to be boiled, cut tofu into small cubes.
- clean dried shiitake mushroom by quick showering (don't sit it in water) and squeezing water out from the mushroom.
- slice the mushroom.
- add a cube of broth boiled water and stir.
- add the mushroom and tofu and decrease a stove to medium high
- add salt and soy sauce and incompletely put the lid on the pot.
- it will take around 10-15 minutes to be cooked
How to: Noddle and Dressing
- slice green onion, throwing away only its root and put it in a small bowl.
- squeeze lime juice in another small bowl.
- when water is boiled, add beansprout in and let it sit for 5 minutes.
- take out only beansprout and save the water for the noodle of your choice.
- cook the noodle, following an instruction on its label.
- while waiting for the noodle, add veggie/olive oil in the heated pan.
- when the oil is hot, add minced garlic and fried until the garlic turns gold
- mix noodle, lime juice, fried garlic, chili power, green onion, and beansprout in a bowl.
- add the soup and stir.
- add more flavor of your taste
Ginger Juice
Ingredients
- some gingers, depending on how spicy you want it to be
- 4 cups of water
- white sugar
- boil water in a pot
- clean and smash gingers
- when the water is boiled, add gingers, decrease the stove to low and let it sit for 10 minutes
- add sugar
